Instructions
Sear beef in cast iron pan. Transfer to large pot, cover with water, and simmer 30 minutes.
Shred beets and cabbage. Chop carrots. Chop dill.
Add all remaining ingredients and more water to cover. Cook for 4 hours or more on a low simmer.
Serve with more fresh dill and sour cream.
