Ingredients
  

  • 1.5 lb beef stew meat
  • 6 beets medium-size
  • 0.5 head cabbage
  • 2-3 carrots
  • 2 t salt
  • pepper
  • 2 bay leaves
  • 4 T apple cider
  • 4 T lemon juice
  • 2 T dill fresh
  • sour cream

Instructions
 

  • Sear beef in cast iron pan. Transfer to large pot, cover with water, and simmer 30 minutes.
  • Shred beets and cabbage. Chop carrots. Chop dill.
  • Add all remaining ingredients and more water to cover. Cook for 4 hours or more on a low simmer.
  • Serve with more fresh dill and sour cream.
